Game 14 Chunky Vegetable Chili Packers @ Bears

Game 14

Chunky Vegetable Chili

Packers @ Bears

Pregame

Cold!! Cold will be the biggest factor in Chicago today with the high expected to be about 5 at game time.  The Pack is hot and still need to win their last 3 games to have a chance at the playoffs.

Nick Perry will still be out for the Packers along with James Starks but mlb Blake Martinez should be able to go.  The Bears are playing much better lately and almost beat the Lions last week.  Matt Barkley, who went to the same community college as Aaron Rodgers, will start for the injured Jay Cutler.

Recipe

Chunky Vegetable Chili
by Debra Byczek

Brrrr...this cold arctic blast has me craving warm, comforting food.  This is a recipe that my mom use to make and I loved the flavor.  I "veganized" it by eliminating the ground beef and adding a can of garbanzo beans.  It's packed with crunchy, healthy veggies.  Easy to throw together and it makes a pot full. It's great with crackers or cornbread.  I served it with cornbread from The Happy Herbivore.

Ingredients:
1 large onion, cut into pieces
1-2 garlic cloves, crushed
1 can (28 ounces) diced tomatoes, undrained
2/3 cup Salsa (I used Drew's organic salsa)
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
3/4 teaspoons salt
1 can (15 ounces) pinto beans, drained and rinsed
1 can (15 ounces) garbanzo beans, drained and rinsed
1/2 red bell pepper, cut into pieces
1/2 green bell pepper, cut into pieces
2 small or 1 large squash, cut into pieces
1 small can whole kernel corn, drained
Cilantro

Cook onion and garlic until tender using a small amount of water or veggie broth.  Add tomatoes, salsa, chili powder, cumin, and salt.  Cover and simmer 10 minutes.  Add beans, bell peppers, squash, and corn.  Cover and simmer until vegetables are crisp-tender.  Sprinkle with cilantro.

Cornbread Ingredients.  See The Happy Herbivore's recipe on Mrs. Plant's website.

Game Recap

Packers win 30-27!  This was a wild one with the Bears coming back and tying up the game with 1:19 left in the 4th.  The Packers were down to 3rd and 11 when Aaron Rodgers threw a bomb to Jordy Nelson to the Bear's 15 and then kicked a field to win the game with time expiring.

The Packers defense was good and bad.  Giving up 17 points in the 4th qtr was the bad.  The good was getting 3 INT's, 2 by Clinton-Dix, and a fumble forced by a sack from Julius Peppers.  On offense, Ty Montgomery had a few breakout runs and the receivers along with Jared Cook had some big plays.

2 games left.  Packers need to beat Minnesota next week at home.  Then they go to Detroit for the last game of the season.  Detroit lost today, so if the Packers beat them, they will be the division winners and hit the playoffs as one of the hottest teams.

Be well,

David
